Blueberry Buckwheat Pancakes
This is one of my favourite breakfast recipes. Yummy pancakes made with buckwheat, buttermilk and blueberries...
Ingredients
Method
1. Combine all dry ingredients
2. In a seperate bowl whisk the butter, eggs and buttermilk
3. Whisk the flour mix into the egg mix. Try not to over beat.
4. Heat a heavy based frypan and melt a little more butter. Pour batter into about 3-4 inch pancakes. Flip when bubbles rise to the surface.
5. Serve with maple syrup (and ice cream if you're feeling extra gluttonous!)...

- 1/2 cup buckwheat flour
- 1/2 cup white flour
- 1 tbsp sugar
- 3/4 tspn salt
- 11/2 cups buttermilk
- 2 eggs
- 3/4 tspn baking soda
- 1 cup blueberries (can be fresh or frozen)
- 2 tbsp melted butter
- Maple syrup
