Hot cross buns

In training for the Sydney Royal Easter Show....

Here's the recipe I plan to follow this Thursday:

Dough
700gms plain flour
14gms yeast
50gms caster sugar
50gms brown sugar
200gms butter
300mls milk
2tspn mixed spice
1.5tspn cinnamon
250gms currants
Juice of 2 oranges
Zest of 1 orange
1tbs golden syrup
1tsp salt
1 egg

Crosses
50gms plain flour
1tspn caster sugar
1/4 cup water

Glaze
50gms sugar
1/4 cup water
1/2 tspn mixed spice

Method
1. Soak currants overnight in orange juice, zest and golden syrup.
2. Gently warm milk and add butter. Stir until melted. Cool until tepid (make sure it's not hot or the yeast will die).
3. In a seperate bowl, mix flour, sugar, spices, salt & yeast.
4. Whisk egg into milk.
5. Add milk/egg mix and currants (strained well) to flour. Mix.
6. Knead for 10mins. Let rest in a warm place for 40mins.
7. Cut into 16 equal portions.
8. Knead each bun and roll into a neat ball. Place next to each other in a greased 22cm squar cake pan.
9. Place a damp cloth over buns and sit in a warm place for 40mins.
10. Brush with milk.
11. Mix 50 gms flour, sugar with water to make crosses. Stir well until a smooth paste. Put in piping bag and put a cross on each bun.
12. Bake for 10mins on 220 degrees c. Bake for another 10-15 mins on 200 degrees c.
13. Simmer glaze ingredients for a few mins until is melted. Brush onto hot buns.
