Nanny's Walnut Biscuits

Ingredients
  • 300g plain flour
  • 200g butter
  • 200g castor sugar
  • 100g ground walnuts
  • zest of half a lemon
  • For filling: apricot jam, ground walnuts, icing sugar, a little lemon zest and milk (make a paste out of this)
    Method
    1. Preheat oven to 175 degrees C (or 150 fan forced)
    2. Mix everything by hand
    3. Roll dough out (.5cm thick)
    4. Cut out rounds using a shot glass or cookie cutter
    5. Bake for no longer than 15mins (fan forced). The biscuits should not be brown.
    6. Allow biscuits to cool.
    7. Make paste and use this to stick two biscuits together.
    8. Dust with icing sugar.
